Ingredients
  

  • 6-8 Cups Seedless Watermelon, cut into 1-inch cubes and chilled
  • 1/2 Cup Fresh Mint Leaves, torn or thinly sliced
  • 1/2 Cup Feta Cheese, crumbled or cubed
  • 2 Tablespoons Fresh Lime Juice
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1/4 Cup Red Onion, very thinly sliced (optional)
  • Sea Salt, to taste
  • Black Pepper, to taste

Method
 

  1. Cut the watermelon into uniform one-inch cubes and chill in the refrigerator for thirty minutes.
  2. Soak the thinly sliced red onion in ice water for ten minutes to reduce pungency, then drain.
  3. In a small bowl, whisk together fresh lime juice and extra virgin olive oil.
  4. In a large bowl, combine chilled watermelon cubes, red onions, and half of the fresh mint.
  5. Drizzle the dressing over the salad and gently toss to coat.
  6. Sprinkle crumbled feta cheese on top, garnish with remaining mint leaves, and season with sea salt and black pepper.
  7. Serve immediately.

Notes

Always serve the salad cold to maintain its refreshing quality. Add feta at the end to prevent it from turning the salad pink.
