- Cut the watermelon into uniform one-inch cubes and chill in the refrigerator for thirty minutes.
- Soak the thinly sliced red onion in ice water for ten minutes to reduce pungency, then drain.
- In a small bowl, whisk together fresh lime juice and extra virgin olive oil.
- In a large bowl, combine chilled watermelon cubes, red onions, and half of the fresh mint.
- Drizzle the dressing over the salad and gently toss to coat.
- Sprinkle crumbled feta cheese on top, garnish with remaining mint leaves, and season with sea salt and black pepper.
- Serve immediately.
Notes
Always serve the salad cold to maintain its refreshing quality. Add feta at the end to prevent it from turning the salad pink.
