Ingredients
  

  • 6 cups seedless watermelon, cubed
  • 2 medium English cucumber, cut into half-moons
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, torn or roughly chopped
  • 1/4 cup red onion, thinly sliced (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Method
 

  1. Cut the watermelon into uniform 1-inch cubes and place in a large serving bowl.
  2. Slice the cucumbers in half lengthwise, then cut into half-moon shapes about 1/4-inch thick and add to the bowl.
  3. Thinly slice the red onion and soak in ice water for ten minutes if a milder flavor is desired, then drain and add to the bowl.
  4. Crumble the feta cheese into bite-sized pieces and add to the bowl.
  5. Tear or roughly chop the fresh mint leaves and add to the bowl.
  6. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper, then pour over the salad ingredients.
  7. Gently toss everything together without breaking up the watermelon or crushing the feta.
  8. Let the salad sit for five minutes before serving to allow flavors to meld.

Notes

Choose the ripest watermelon for maximum sweetness. Chill ingredients before assembling for a refreshing salad. Store leftovers in an airtight container for up to 24 hours.
