Ingredients
Method
- Cut the watermelon into uniform 1-inch cubes and place in a large serving bowl.
- Slice the cucumbers in half lengthwise, then cut into half-moon shapes about 1/4-inch thick and add to the bowl.
- Thinly slice the red onion and soak in ice water for ten minutes if a milder flavor is desired, then drain and add to the bowl.
- Crumble the feta cheese into bite-sized pieces and add to the bowl.
- Tear or roughly chop the fresh mint leaves and add to the bowl.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper, then pour over the salad ingredients.
- Gently toss everything together without breaking up the watermelon or crushing the feta.
- Let the salad sit for five minutes before serving to allow flavors to meld.
Notes
Choose the ripest watermelon for maximum sweetness. Chill ingredients before assembling for a refreshing salad. Store leftovers in an airtight container for up to 24 hours.
