- Prepare grains according to package instructions, preferably in vegetable broth.
- Spread cooked grains on a baking sheet to cool completely.
- Cut watermelon into uniform cubes and dice cucumber.
- Finely mince red onion and soak in cold water for 10 minutes.
- In a small jar, combine olive oil, lime juice, honey, salt, and pepper; shake until emulsified.
- In a large mixing bowl, combine cooled grains, watermelon, cucumber, and red onion.
- Pour dressing over the mixture and toss gently.
- Add crumbled feta and fresh mint, then give a final light toss.
- Taste and adjust seasoning if necessary, then serve immediately or chill for 30 minutes.
Notes
Ensure grains are completely cold before mixing to prevent sogginess. Store leftovers in an airtight container for up to two days.
