Ingredients
  

  • 4 cups cooked turkey breast, cubed or shredded
  • 1 cup dried cranberries, sweetened or unsweetened
  • 1 cup celery, finely diced
  • 1/2 cup pecans or walnuts, toasted and chopped
  • 3 stalks green onions, thinly sliced
  • 1/2 cup mayonnaise, high-quality
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice, freshly squeezed
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Method
 

  1. Prepare turkey by cutting it into bite-sized cubes or shredding it with two forks.
  2. In a small mixing bowl, combine mayonnaise, Greek yogurt, and lemon juice. Whisk until smooth.
  3. Add salt and black pepper to the dressing, adjusting seasoning as needed.
  4. In a large mixing bowl, combine turkey, dried cranberries, celery, green onions, and nuts. Toss gently.
  5. Pour the dressing over the turkey mixture and fold until evenly coated.
  6. Stir in fresh parsley for color and flavor.
  7. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Before serving, give the salad a final toss and adjust consistency if needed.

Notes

Use fresh ingredients for the best flavor. Toast nuts for added depth. Serve on greens, in croissants, or as sliders.
