Ingredients
  

  • 1/2 cup tahini (sesame paste)
  • 3-4 tablespoons fresh lemon juice
  • 1-2 teaspoons maple syrup or honey
  • 1 clove garlic, finely minced or pressed
  • 3-5 tablespoons warm water
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cumin (optional)

Method
 

  1. Prepare the garlic: Mince one fresh garlic clove very finely.
  2. Combine the base: In a medium-sized mixing bowl, add the tahini, lemon juice, maple syrup, minced garlic, sea salt, and optional cumin.
  3. The initial whisk: Begin whisking the ingredients together until they start to thicken.
  4. Add water: Slowly drizzle in one tablespoon of warm water at a time while whisking vigorously.
  5. Adjust consistency: Keep adding water until the dressing reaches your preferred thickness.
  6. Taste and refine: Adjust seasoning to taste, adding more salt, lemon, or sweetener as needed.

Notes

Use a runny, well-stirred tahini. Freshly squeezed lemon juice is recommended for best flavor. Store in an airtight container in the refrigerator for up to 7 days.
