Ingredients
  

  • 1 lb Lean Ground Beef (90/10)
  • 6 cups Romaine Lettuce (chopped)
  • 1 tbsp Chili Powder
  • 1 tsp Cumi
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 cup Cherry Tomatoes (halved)
  • 1/4 cup Red Onion (diced)
  • 1 can Black Beans (15 oz, rinsed)
  • 1/2 cup Sweet Corn (frozen or canned)
  • 1/2 cup Shredded Cheddar or Mexican Blend
  • 2 cups Tortilla Chips (crushed)
  • 1/2 cup Salsa or Creamy Avocado Dressing

Method
 

  1. Brown the Beef: Place a large skillet over medium-high heat. Add the ground beef and cook until no pink remains, breaking it into small crumbles.
  2. Season the Meat: Drain excess fat, lower heat to medium, add chili powder, cumin, garlic powder, onion powder, and a splash of water. Stir and simmer for 3 to 5 minutes.
  3. Prepare the Greens: Wash and chop romaine lettuce, placing it in a large mixing bowl.
  4. Chop the Vegetables: Dice red onion, halve cherry tomatoes, and rinse black beans and corn.
  5. Layer the Ingredients: Top the lettuce with warm beef, black beans, corn, tomatoes, and onions.
  6. Add the Finishing Touches: Sprinkle cheese over the warm meat, add crushed tortilla chips, and pour dressing over the salad.
  7. Toss and Serve: Gently toss the salad and serve immediately.
