- Cut the watermelon into bite-sized cubes and place in a large mixing bowl.
- Slice the red onion into very thin slivers and soak in ice water for 10 minutes if the flavor is too strong. Drain well.
- Stack the mint leaves, roll tightly, and slice into thin ribbons. Add to the bowl with watermelon and onion.
- Gently crumble the feta over the mixture, being careful not to over-mix.
- In a separate bowl, whisk together lime juice and olive oil, then pour over the salad.
- Gently toss the ingredients to coat without crushing the watermelon.
- Sprinkle with flaky sea salt and freshly ground black pepper before serving.
Notes
Use a cold watermelon for the best flavor and texture. Keep the dressing separate until serving to prevent sogginess.
