Ingredients
  

  • 6 cups fresh watermelon, cubed and chilled
  • 1 cup feta cheese, crumbled from a block
  • 1/2 cup fresh mint leaves, thinly sliced
  • 1/4 cup red onion, very thinly sliced
  • 2 tablespoons lime juice, freshly squeezed
  • 2 tablespoons extra virgin olive oil, high quality
  • Sea salt, to taste
  • Black pepper, to taste

Method
 

  1. Cut the watermelon into bite-sized cubes and place in a large mixing bowl.
  2. Slice the red onion into very thin slivers and soak in ice water for 10 minutes if the flavor is too strong. Drain well.
  3. Stack the mint leaves, roll tightly, and slice into thin ribbons. Add to the bowl with watermelon and onion.
  4. Gently crumble the feta over the mixture, being careful not to over-mix.
  5. In a separate bowl, whisk together lime juice and olive oil, then pour over the salad.
  6. Gently toss the ingredients to coat without crushing the watermelon.
  7. Sprinkle with flaky sea salt and freshly ground black pepper before serving.

Notes

Use a cold watermelon for the best flavor and texture. Keep the dressing separate until serving to prevent sogginess.
