- Wash strawberries thoroughly under cool running water and hull them.
- Place cleaned strawberries in a high-speed blender or food processor.
- Add olive oil, apple cider vinegar, honey, and Dijon mustard.
- Season with a pinch of salt and black pepper.
- Secure the lid and pulse several times to break down the fruit.
- Blend on high speed for about thirty seconds until smooth.
- Taste and adjust sweetness or acidity as needed.
- Pour into a glass jar or dressing carafe and stir in poppy seeds if using.
Notes
Use the ripest berries for the best flavor. Store in an airtight container in the refrigerator for 5-7 days. Shake before serving.
