Ingredients
  

  • 1 Cup Fresh Strawberries, hulled
  • 1/2 Cup Extra Virgin Olive Oil
  • 3 Tablespoons Apple Cider Vinegar
  • 1-2 Tablespoons Honey or Maple Syrup
  • 1 Teaspoon Dijon Mustard
  • Salt and Black Pepper to taste
  • 1/2 Teaspoon Fresh Poppy Seeds (Optional)

Method
 

  1. Wash strawberries thoroughly under cool running water and hull them.
  2. Place cleaned strawberries in a high-speed blender or food processor.
  3. Add olive oil, apple cider vinegar, honey, and Dijon mustard.
  4. Season with a pinch of salt and black pepper.
  5. Secure the lid and pulse several times to break down the fruit.
  6. Blend on high speed for about thirty seconds until smooth.
  7. Taste and adjust sweetness or acidity as needed.
  8. Pour into a glass jar or dressing carafe and stir in poppy seeds if using.

Notes

Use the ripest berries for the best flavor. Store in an airtight container in the refrigerator for 5-7 days. Shake before serving.
