  • 6 cups mixed salad greens (spinach, arugula, or spring mix)
  • 2 cups fresh strawberries, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup candied pecans or sliced almonds
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Wash and thoroughly dry the salad greens.
  2. Hull and slice the fresh strawberries.
  3. Prepare the poppyseed dressing by whisking together olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper.
  4. In a large salad bowl, combine the greens, sliced strawberries, crumbled feta, nuts, and red onion. Gently toss to distribute ingredients evenly.
