Ingredients
  

  • 1.5 lbs Large Shrimp (peeled and deveined)
  • 3 tablespoons Olive Oil
  • 3 cloves Garlic (minced)
  • 2 tablespoons Sriracha or Chili Paste
  • 1 teaspoon Red Pepper Flakes
  • 1 tablespoon Honey or Agave Nectar
  • 1/4 cup Fresh Lime Juice
  • 6 cups Mixed Salad Greens
  • 1 large Red Bell Pepper (sliced)
  • 1 medium Cucumber (sliced)
  • 1/2 cup Red Onion (thinly sliced)
  • 1/2 cup Fresh Cilantro (chopped)
  • 1 large Avocado (diced)
  • Salt and Black Pepper (to taste)

Method
 

  1. Pat the shrimp dry with paper towels.
  2. In a medium bowl, whisk together olive oil, minced garlic, sriracha, honey, and red pepper flakes.
  3. Toss the shrimp in the mixture and let marinate for at least ten minutes.
  4. Prepare the vegetable base by placing mixed greens, bell peppers, cucumbers, and red onions in a large serving bowl.
  5. Heat a large skillet over medium-high heat and add the shrimp in a single layer.
  6. Cook the shrimp for about two minutes per side until they turn pink and opaque.
  7. Remove the pan from heat to prevent overcooking.
  8. Mix lime juice with a splash of olive oil and salt for the dressing.
  9. Pour the dressing over the vegetables and toss thoroughly.
  10. Top the greens with the warm spicy shrimp, diced avocado, and fresh cilantro.
  11. Serve immediately while the shrimp are still warm.

Notes

For meal prep, store dressing separately to keep greens crisp. Use fresh lime juice for best flavor.
