Ingredients
  

  • 8 ounces Cold-Smoked Salmon (sliced or flaked)
  • 5 cups Baby Arugula or Mixed Spring Greens
  • 1 medium English Cucumber (thinly sliced)
  • 1/4 small Red Onion (thinly sliced)
  • 3 tablespoons Fresh Dill (chopped)
  • 2 tablespoons Capers (drained)
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 1 teaspoon Dijon Mustard
  • Sea Salt and Black Pepper to taste

Method
 

  1. In a small bowl or mason jar, combine the extra virgin olive oil, fresh lemon juice, Dijon mustard, salt, and pepper. Whisk or shake until emulsified.
  2. Wash and dry the greens thoroughly. Slice the cucumber and red onion thinly.
  3. Place the greens in a large bowl, drizzle half of the dressing over them, and toss gently.
  4. Transfer the dressed greens to a serving platter or individual bowls.
  5. Layer the sliced cucumbers and red onions over the greens, then sprinkle with capers and dill.
  6. Flake the smoked salmon into bite-sized pieces and distribute over the salad.
  7. Drizzle the remaining dressing on top, add fresh black pepper, and garnish with dill sprigs. Serve immediately.

Notes

To keep the salad fresh, dress only the portion you plan to eat immediately. Store leftover components separately.
