Ingredients
  

  • 4 Cups Smoked Chicken, shredded or diced
  • 1/2 Cup Mayonnaise, high-quality
  • 1/4 Cup Greek Yogurt, plain and unsweetened
  • 1 Cup Celery, finely diced
  • 1 Cup Red Grapes, halved or quartered
  • 1/2 Cup Pecans, toasted and chopped
  • 1/4 Cup Red Onion, very finely minced
  • 1 Tablespoon Lemon Juice, freshly squeezed
  • 1 Teaspoon Dijon Mustard
  • 2 Tablespoons Fresh Dill, chopped finely
  • Salt and Black Pepper, to taste

Method
 

  1. Prepare your smoked chicken and let it cool completely before dicing.
  2. Shred the chicken into bite-sized pieces or cut it into uniform cubes and place in a large mixing bowl.
  3. Dice the celery, mince the red onion, halve the grapes, and chop the toasted pecans. Add these to the bowl with the chicken.
  4. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, and Dijon mustard. Add the fresh chopped dill and a pinch of salt and pepper.
  5. Pour the dressing over the chicken mixture and fold everything together gently.
  6. Taste the salad and adjust the seasoning if necessary.
  7. Cover the bowl with plastic wrap and refrigerate for at least thirty minutes.
  8. Serve and enjoy.
