Ingredients
  

  • 1 cup quinoa, uncooked
  • 2 cups water or vegetable broth
  • 2 large fresh mango, peeled and diced
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 can (15 oz) black beans, rinsed and drained (optional)
  • 1/4 cup lime juice, freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Method
 

  1. Rinse the quinoa under cold water using a fine-mesh strainer.
  2. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let sit covered for 5 minutes.
  4. While quinoa cools, prepare the fresh ingredients: peel and dice mango, dice bell pepper, chop onion and cilantro, and rinse black beans.
  5. In a small jar or bowl, whisk together lime juice, olive oil, honey, salt, and pepper to create the dressing.
  6. Transfer cooled quinoa to a large mixing bowl and fluff with a fork.
  7. Add mango, bell pepper, onion, cilantro, and black beans to the bowl.
  8. Pour dressing over the mixture and toss until evenly coated.
  9. Refrigerate for at least 30 minutes before serving.

Notes

Use ripe mangos for the best texture and sweetness. This salad can be made ahead of time and tastes better the next day.
