Ingredients
  

  • 20 oz Refrigerated Cheese Tortellini
  • 3/4 cup Basil Pesto
  • 1.5 cups Cherry Tomatoes, halved or quartered
  • 8 oz Fresh Mozzarella Pearls
  • 2 cups Baby Spinach, roughly chopped
  • 1/4 cup Pine Nuts, toasted
  • 1/4 cup Parmesan Cheese, freshly shredded or shaved
  • 1/4 cup Fresh Basil Leaves, torn for garnish
  • 1 tbsp Lemon Juice
  • Salt and Black Pepper to taste

Method
 

  1. Bring a large pot of salted water to a rolling boil. Add the refrigerated tortellini and cook according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the basil pesto and lemon juice. Stir until smooth. Add the cooled tortellini and toss to coat.
  3. Fold in the cherry tomatoes, mozzarella pearls, and chopped spinach. Sprinkle with toasted pine nuts and parmesan cheese. Toss gently to combine.
  4. Season with salt and black pepper to taste. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Use high-quality ingredients for the best flavor. This salad can be made ahead of time and tastes even better the next day.
