Ingredients
  

  • 3 large Fresh Peaches, sliced into wedges
  • 1 cup Fresh Raspberries, gently rinsed and patted dry
  • 5 cups Mixed Baby Greens (spinach, arugula, or spring mix)
  • 4 ounces Goat Cheese, crumbled
  • 1/2 cup Toasted Pecans, roughly chopped
  • 1/4 small Red Onion, thinly sliced
  • 2 tablespoons Balsamic Glaze
  • 1 tablespoon Extra Virgin Olive Oil
  • Salt and Pepper to taste

Method
 

  1. Wash the mixed greens in cold water and dry them using a salad spinner.
  2. Slice the peaches into wedges and the red onion into thin slivers.
  3. In a large bowl, place the greens and drizzle with olive oil, tossing gently.
  4. Arrange the peach wedges and red onion slices over the greens.
  5. Sprinkle the fresh raspberries evenly throughout the salad.
  6. Crumble the goat cheese over the top and add the toasted pecans.
  7. Drizzle the balsamic glaze over the salad and season with salt and pepper.
  8. Toss gently just before serving to avoid crushing the raspberries.

Notes

Ensure the peaches are ripe but firm. Chill the fruit before assembly for a refreshing salad. Store components separately if preparing in advance.
