Method
- Wash the peaches thoroughly, remove the pits, and slice them into manageable chunks.
- Peel the fresh ginger root using the edge of a spoon and grate it finely.
- Place the peach slices, grated ginger, apple cider vinegar, honey, salt, and pepper into your blender container.
- Secure the lid tightly and blend on high speed until the mixture looks smooth and consistent.
- While the blender runs on a low setting, slowly stream in the extra virgin olive oil to emulsify the dressing.
- If the dressing is too thick, add a tablespoon of water and pulse again.
- Taste the dressing and adjust salt or honey as needed.
- Pour the dressing into a clean glass jar and let it sit for at least ten minutes before serving.
Notes
Use very ripe peaches for the best flavor. Store in an airtight glass container in the refrigerator for up to five days.
