Method
- Wash the nectarines thoroughly under cold running water and dry them.
- Cut the nectarines into even wedges, removing the pits carefully.
- Arrange the nectarine wedges on a large serving platter.
- Tear the fresh mozzarella or burrata cheese into small pieces and distribute over the nectarines.
- Wash and pat dry the basil leaves, then scatter them over the salad.
- If using, add the thinly sliced red onion across the dish.
- Drizzle the extra virgin olive oil over the salad.
- Follow with a drizzle of balsamic glaze.
- Finish with a sprinkle of flaky sea salt and freshly ground black pepper.
- Serve immediately.
Notes
Use ripe but firm nectarines for the best flavor. Tearing basil by hand preserves its oils. Serve at room temperature for optimal taste.
