Nectarine and Basil Salad

Ingredients
  

  • 4 medium fresh nectarines, sliced into wedges
  • 1 cup fresh basil leaves, torn or kept whole if small
  • 8 ounces fresh mozzarella or burrata, torn into bite-sized pieces
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 small red onion, very thinly sliced (optional)

Method
 

  1. Wash the nectarines thoroughly under cold running water and dry them.
  2. Cut the nectarines into even wedges, removing the pits carefully.
  3. Arrange the nectarine wedges on a large serving platter.
  4. Tear the fresh mozzarella or burrata cheese into small pieces and distribute over the nectarines.
  5. Wash and pat dry the basil leaves, then scatter them over the salad.
  6. If using, add the thinly sliced red onion across the dish.
  7. Drizzle the extra virgin olive oil over the salad.
  8. Follow with a drizzle of balsamic glaze.
  9. Finish with a sprinkle of flaky sea salt and freshly ground black pepper.
  10. Serve immediately.

Notes

Use ripe but firm nectarines for the best flavor. Tearing basil by hand preserves its oils. Serve at room temperature for optimal taste.
