Ingredients
  

  • 1/4 cup Fresh Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1/2 cup Extra Virgin Olive Oil
  • 1-2 teaspoons Honey or Maple Syrup
  • 1 tablespoon Fresh Parsley (minced)
  • 1 tablespoon Fresh Chives (minced)
  • 1 teaspoon Fresh Dill (minced)
  • 1 small clove Garlic (minced)
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper

Method
 

  1. Zest the lemon before cutting it in half.
  2. Squeeze the juice into a bowl or mason jar, removing any seeds.
  3. Add honey, salt, pepper, and minced garlic; whisk until dissolved.
  4. Slowly stream in the olive oil while whisking to create an emulsion, or shake in a jar.
  5. Stir in the chopped fresh herbs.
  6. Taste and adjust seasoning if necessary.

Notes

Use fresh ingredients for the best flavor. Let the dressing sit for 10-15 minutes before serving to enhance the flavors.
