Ingredients
  

  • 1/4 Cup Fresh Lemon Juice
  • 1 Teaspoon Lemon Zest
  • 1/2 Cup Avocado or Olive Oil
  • 2 Tablespoons Honey or Maple Syrup
  • 1 Teaspoon Dijon Mustard
  • 1 Tablespoon Poppy Seeds
  • 1/2 Teaspoon Sea Salt
  • 1/4 Teaspoon Black Pepper

Method
 

  1. Zest one large lemon into a small glass jar.
  2. Squeeze the juice of that lemon until you reach 1/4 cup and add it to the jar.
  3. Add honey and Dijon mustard to the jar.
  4. Slowly pour in the chosen oil while shaking the jar.
  5. Add sea salt and cracked black pepper.
  6. Finally, add the poppy seeds and secure the lid tightly.
  7. Shake vigorously for about 30 seconds until combined and slightly thickened.

Notes

Use fresh lemon juice for the best flavor. Allow the dressing to sit for at least 10 minutes before serving to meld flavors.
