Ingredients
  

  • 1 cup quinoa, rinsed thoroughly before cooking
  • 2 cups water or vegetable broth
  • 1/4 cup fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, minced
  • 2 tablespoons fresh dill
  • 1 medium English cucumber, diced
  • 1 cup cherry tomatoes, halved or quartered
  • 1/4 cup red onion, finely minced
  • 1/2 cup feta cheese, crumbled (optional for vegan)
  • Salt and black pepper to taste

Method
 

  1. Rinse the quinoa under cold water to remove bitterness.
  2. Combine quinoa and water or broth in a medium saucepan, bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes until liquid is absorbed.
  3. Remove from heat and let sit covered for 5 minutes, then fluff with a fork and spread on a baking sheet to cool.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to make the dressing.
  5. In a large mixing bowl, combine diced cucumbers, tomatoes, red onion, and chopped herbs.
  6. Once quinoa is at room temperature, add it to the bowl with the vegetables.
  7. Pour the dressing over the mixture and toss gently to combine.
  8. Fold in feta cheese right before serving.

Notes

Always use room temperature or cold quinoa when mixing to preserve the herbs' color. Let the salad rest for at least 30 minutes before serving for better flavor.
