Ingredients
  

  • 1 Large Honeydew Melon, ripe and chilled, cubed or balled
  • 4-6 Ounces Prosciutto, thinly sliced and torn into ribbons
  • 8 Ounces Fresh Mozzarella Pearls, drained well
  • 1/2 Cup Fresh Mint Leaves, torn or chiffonade cut
  • 3 Tablespoons Extra Virgin Olive Oil, high-quality
  • 2 Tablespoons Fresh Lime Juice, approximately one large lime
  • 1 Teaspoon Honey or Agave
  • Flaky Sea Salt, to taste
  • Cracked Black Pepper, to taste

Method
 

  1. Prepare the honeydew melon by cutting it in half and removing the seeds. Cube or ball the fruit.
  2. Place the melon pieces into a large chilled mixing bowl.
  3. In a small jar or bowl, whisk together the extra virgin olive oil, lime juice, and honey until emulsified.
  4. Tear the prosciutto into long, thin strips and gently fold it along with the mozzarella pearls into the bowl with the melon.
  5. Pour the dressing over the ingredients and toss gently to coat without bruising the fruit.
  6. Scatter the fresh mint leaves over the top, and sprinkle with flaky sea salt and cracked black pepper just before serving.

Notes

Chill the honeydew for at least two hours before assembling. Do not dress the salad until ready to serve to prevent the melon from becoming mushy.
