Ingredients
  

  • 1 lb Fresh Strawberries, hulled and quartered
  • 1 cup Blueberries, rinsed and dried
  • 2 cups Pineapple, freshly diced into chunks
  • 3 large Kiwi, peeled and sliced into rounds
  • 1 cup Red Grapes, halved lengthwise
  • 2 small Mandarin Oranges, peeled and segmented
  • 3 tablespoons Raw Honey
  • 2 tablespoons Fresh Lime Juice
  • 1 teaspoon Lime Zest, grated finely
  • 1 tablespoon Fresh Mint Leaves, chopped (optional garnish)

Method
 

  1. Wash all the fruit thoroughly and dry them.
  2. Slice the strawberries into quarters, peel and cut the kiwis into bite-sized pieces, and halve the grapes.
  3. Place all the prepared fruit into a large mixing bowl.
  4. In a small bowl, whisk together the raw honey, fresh lime juice, and lime zest until smooth.
  5. Pour the dressing over the fruit and gently toss to coat.
  6. If using mint, sprinkle it over the top right before serving.

Notes

Use fresh limes for the best flavor. Dress the salad no more than 30 minutes before serving to prevent sogginess.
