- Preheat your grill to medium-high heat.
- Clean the corn cobs and husk them if preferred.
- Brush each ear lightly with olive oil and place on the grill.
- Turn the corn every 2-3 minutes for about 10-12 minutes until charred.
- Remove the corn from the grill and let it cool for a few minutes.
- In a large mixing bowl, whisk together olive oil, lime juice, garlic, chili powder, salt, and pepper.
- Stand each corn cob upright and slice the kernels off into the bowl with the dressing.
- Fold in the diced red bell pepper, minced red onion, and chopped cilantro.
- Sprinkle crumbled cheese over the top and toss gently.
- Serve warm or chill in the refrigerator for an hour before serving.

Use fresh ingredients for the best flavor. Adjust seasoning to taste and consider adding jalapenos for heat or black beans for heartiness.
