- Prepare the chicken marinade by whisking together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Marinate the chicken for at least 30 minutes.
- Cook quinoa or rice according to package instructions, preferably in chicken broth for added flavor.
- Prepare fresh vegetables by dicing cucumber, halving cherry tomatoes, and slicing red onion. Optionally toss with vinegar and oil.
- Grill the marinated chicken for 6-7 minutes per side until cooked through. Let it rest before slicing.
- Assemble the Greek Chicken Bowl with a base of grains, topped with sliced chicken, vegetables, olives, tzatziki, and feta.
Notes
