Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves minced garlic
  • 1 tablespoon dried oregano
  • 3 cups cooked quinoa or brown rice
  • 1 large English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce (store-bought or homemade)

Method
 

  1. Prepare the chicken marinade by whisking together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Marinate the chicken for at least 30 minutes.
  2. Cook quinoa or rice according to package instructions, preferably in chicken broth for added flavor.
  3. Prepare fresh vegetables by dicing cucumber, halving cherry tomatoes, and slicing red onion. Optionally toss with vinegar and oil.
  4. Grill the marinated chicken for 6-7 minutes per side until cooked through. Let it rest before slicing.
  5. Assemble the Greek Chicken Bowl with a base of grains, topped with sliced chicken, vegetables, olives, tzatziki, and feta.

Notes

Use fresh lemon juice for best flavor. Allow chicken to rest after cooking for juiciness. Store components separately for meal prep.
