Method
- Wash all vegetables thoroughly under cold running water and pat dry.
- Cut cucumbers into bite-sized pieces and place in a large mixing bowl.
- Halve cherry tomatoes and add to the bowl with cucumbers.
- Thinly slice red onion and add to the bowl. Soak in cold water if desired to mellow flavor.
- Cut avocados in half, remove the pit, scoop out the flesh, and dice into chunks. Add to the bowl last.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning as needed.
- Pour dressing over the vegetables and gently toss to combine without mashing the avocado.
- Taste and adjust seasonings as necessary before serving.
