Ingredients
  

  • 2 large ripe avocados
  • 2 medium cucumbers
  • 2 cups cherry or grape tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup fresh cilantro or parsley, chopped (optional)
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Wash all vegetables thoroughly under cold running water and pat dry.
  2. Cut cucumbers into bite-sized pieces and place in a large mixing bowl.
  3. Halve cherry tomatoes and add to the bowl with cucumbers.
  4. Thinly slice red onion and add to the bowl. Soak in cold water if desired to mellow flavor.
  5. Cut avocados in half, remove the pit, scoop out the flesh, and dice into chunks. Add to the bowl last.
  6. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning as needed.
  7. Pour dressing over the vegetables and gently toss to combine without mashing the avocado.
  8. Taste and adjust seasonings as necessary before serving.

Notes

Use the freshest ingredients possible for the best flavor. Prepare just before serving to maintain texture.
