- Bring a large pot of salted water to a rolling boil. Cook the pasta according to package directions until al dente.
- In a large mixing bowl, whisk together mayonnaise, sour cream, and pickle juice until smooth. Add garlic powder, black pepper, and fresh dill. Taste and adjust seasonings as needed.
- Drain the cooked pasta thoroughly and rinse it under cold water to stop the cooking process.
- Transfer the cooled pasta to the bowl with dressing. Add diced pickles, red onion, and cheese cubes. Fold everything together gently but thoroughly.
- Cover and refrigerate for at least one hour before serving.
Notes
Using high-quality pickles improves texture. Make it the night before for best flavor. Stir in extra pickle juice if salad seems dry after refrigeration.
