Ingredients
  

  • 16 oz Rotini or Fusilli Pasta, cooked al dente and cooled
  • 1.5 cups Dill Pickles, finely chopped
  • 1/2 cup Pickle Juice, reserved from the pickle jar
  • 1 cup Sharp Cheddar Cheese, small cubes or shredded
  • 1/2 cup Red Onion, finely diced
  • 1/4 cup Fresh Dill, chopped finely
  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 teaspoon Garlic Powder
  • Salt and Pepper, to taste

Method
 

  1. Boil a large pot of salted water and cook the pasta until al dente. Drain and rinse with cold water.
  2. Chop the dill pickles, dice the red onion, and cube the cheese.
  3. In a bowl, whisk together mayonnaise, sour cream, pickle juice, garlic powder, and fresh dill.
  4. Combine the cooled pasta, pickles, onions, and cheese in a large bowl. Pour the dressing over and mix gently.
  5. Cover and refrigerate for at least one hour before serving.

Notes

Ensure to salt the pasta water generously. Use fresh dill for the best flavor. Adjust seasoning with extra pickle juice if needed.
