Ingredients
  

  • 2 large English Cucumbers, thinly sliced or cubed
  • 1/2 cup Fresh Mint Leaves, loosely packed and tor
  • 3 tablespoons Lime Juice, freshly squeezed
  • 1 tablespoon Honey or Agave Nectar
  • 1/2 teaspoon Sea Salt
  • 1/4 cup Red Onion, very thinly sliced (optional)
  • 1 small Jalapeño, seeded and minced
  • 2 tablespoons Cold Water

Method
 

  1. Wash the English cucumbers thoroughly and slice them into thin rounds or half-moons.
  2. Thinly slice the red onion and soak the slices in ice water for five minutes. Mince the jalapeño finely.
  3. In a small jar or bowl, combine lime juice, honey, sea salt, and cold water. Whisk until the honey dissolves.
  4. Pour the dressing over the cucumbers and onions. Add the torn mint leaves and toss gently.
  5. Cover and refrigerate for at least 20 minutes to allow flavors to meld.
  6. Before serving, give the salad a final toss and garnish with extra flaky sea salt or mint leaves.

Notes

Use fresh ingredients for the best flavor. Chill cucumbers before slicing for extra crunch. Adjust sweetness with honey or agave to taste.
