Ingredients
  

  • 2 Large English Cucumbers, thinly sliced or diced
  • 2 Medium Ripe Avocados, pitted and cubed
  • 1/4 Cup Red Onion, thinly sliced into half-moons
  • 1/4 Cup Fresh Cilantro, finely chopped
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1-2 Tablespoons Fresh Lime Juice
  • 1/2 Teaspoon Sea Salt, adjust to taste
  • 1/4 Teaspoon Black Pepper, freshly cracked

Method
 

  1. Wash the English cucumbers thoroughly and slice them into rounds or bite-sized half-moons. Place them into a large mixing bowl.
  2. Slice the red onion very thinly and add it to the bowl with the cucumbers.
  3. Slice the avocados in half, remove the pit, and cut the flesh into cubes while still in the skin. Scoop the cubes into the bowl gently.
  4. Sprinkle the finely chopped cilantro over the mixture.
  5. In a small jar or bowl, whisk together the extra virgin olive oil, fresh lime juice, salt, and black pepper.
  6. Pour the dressing over the vegetables and toss gently to coat without breaking the avocado cubes.
  7. Taste and adjust seasoning if necessary. Serve immediately.
