Ingredients
  

  • 4 cups fresh broccoli florets, chopped small
  • 6 strips cooked bacon, crumbled
  • 1/2 cup dried cranberries
  • 1/3 cup sunflower seeds
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar
  • Salt and pepper to taste

Method
 

  1. Wash the broccoli thoroughly and cut the florets into very small, bite-sized pieces.
  2. Cook the bacon until crispy, then crumble it into small pieces.
  3. In a large mixing bowl, combine the chopped broccoli, crumbled bacon, dried cranberries, sunflower seeds, diced red onion, and shredded cheddar cheese. Toss gently.
  4. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth.
  5. Pour the dressing over the broccoli mixture and toss until evenly coated.
  6. Season with salt and pepper to taste.
  7. Cover and refrigerate for at least 30 minutes before serving.

Notes

Make sure to dry the broccoli thoroughly after washing to avoid a watery salad. For best results, add sunflower seeds just before serving.
