Method
- Prepare your ingredients by washing the cilantro and juicing the limes. Peel and pit the avocados carefully.
- Place the avocado flesh into the bowl of a food processor or a high-speed blender. Add the garlic cloves, cilantro, lime juice, and olive oil. If using Greek yogurt, add it now.
- Start the blender on a low speed to break down the solids. Gradually increase the speed until the mixture becomes smooth and vibrant green.
- Stop the motor and scrape down the sides with a spatula. Check the consistency; if too thick, add water one tablespoon at a time and blend again.
- Taste the dressing and season with salt and pepper. Pulse once more to incorporate the seasoning.
- Pour the dressing into a glass jar or serving bowl and enjoy.
Notes
Always use ripe avocados for the best flavor and texture. Store in an airtight container in the refrigerator for up to 3-4 days. Press plastic wrap against the surface to minimize oxidation.
