Ingredients
  

  • 2 medium ripe avocados, pitted and peeled
  • 3 tablespoons fresh lime juice
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh cilantro, packed leaves and stems
  • 2 medium garlic cloves, peeled and smashed
  • 1/4 cup Greek yogurt or sour cream (optional)
  • 2-4 tablespoons water (to reach desired consistency)
  • 1/2 teaspoon sea salt (adjust to taste)
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 jalapeƱo (optional, remove seeds for less heat)

Method
 

  1. Prepare your ingredients by washing the cilantro and juicing the limes. Peel and pit the avocados carefully.
  2. Place the avocado flesh into the bowl of a food processor or a high-speed blender. Add the garlic cloves, cilantro, lime juice, and olive oil. If using Greek yogurt, add it now.
  3. Start the blender on a low speed to break down the solids. Gradually increase the speed until the mixture becomes smooth and vibrant green.
  4. Stop the motor and scrape down the sides with a spatula. Check the consistency; if too thick, add water one tablespoon at a time and blend again.
  5. Taste the dressing and season with salt and pepper. Pulse once more to incorporate the seasoning.
  6. Pour the dressing into a glass jar or serving bowl and enjoy.

Notes

Always use ripe avocados for the best flavor and texture. Store in an airtight container in the refrigerator for up to 3-4 days. Press plastic wrap against the surface to minimize oxidation.
