Ingredients
  

  • 1 lb Fresh Strawberries, hulled and quartered
  • 1 cup Fresh Blueberries, rinsed and dried
  • 2 cups Fresh Pineapple, diced into bite-sized chunks
  • 4 large Kiwi, peeled and sliced into rounds
  • 2 cups Mandarin Oranges, peeled and segmented
  • 1 cup Red Grapes, halved lengthwise
  • 3 tbsp Honey (or agave for vegan version)
  • 2 tbsp Fresh Lime Juice
  • 1 tbsp Fresh Mint, finely chiffonaded for garnish

Method
 

  1. Wash all the fruit thoroughly under cold running water and pat the berries dry with a paper towel.
  2. Hull the strawberries and cut them into quarters.
  3. Peel the kiwis and slice them into thin rounds.
  4. Dice the fresh pineapple into uniform bite-sized pieces.
  5. Peel the mandarin oranges and remove as much of the white pith as possible.
  6. Halve the red grapes.
  7. Place all the prepared fruit into a large glass mixing bowl.
  8. In a separate small bowl, whisk together the honey and fresh lime juice until smooth.
  9. Pour the glaze over the fruit and gently fold the fruit together with a large silicone spatula.
  10. Sprinkle the fresh mint over the top and serve immediately or chill for thirty minutes.

Notes

Use firm, ripe fruits for the best texture. Add the dressing right before serving to prevent sogginess.
