Ingredients
  

  • 4 Cups Fresh Sweet Cherries, pitted and halved
  • 1/2 Cup Slivered Almonds, toasted
  • 1/4 Cup Fresh Mint Leaves, thinly sliced
  • 2 Tablespoons Honey or Agave Nectar
  • 1 Tablespoon Fresh Lime Juice
  • 1/2 Teaspoon Vanilla Extract
  • 1 Pinch Sea Salt

Method
 

  1. Prepare the cherries by pitting and halving them.
  2. Toast the slivered almonds in a dry skillet over medium heat for 3-5 minutes until golden brown.
  3. In a small bowl, whisk together honey, lime juice, vanilla extract, and sea salt to make the dressing.
  4. In a large mixing bowl, combine the cherries and sliced mint, then pour the dressing over and toss gently.
  5. Fold in the toasted almonds just before serving and garnish with extra mint leaves.

Notes

Use fresh, firm cherries for the best texture. Toasting the almonds enhances their flavor. Serve immediately for optimal freshness.
