Ingredients
  

  • 24 cherry tomatoes
  • 24 fresh mozzarella balls (Ciliegine or Bocconcini size)
  • 24 large fresh basil leaves
  • 2-3 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Sea salt to taste
  • Black pepper to taste
  • 24 bamboo skewers (4-inch or 6-inch length)

Method
 

  1. Wash the cherry tomatoes and basil leaves thoroughly and pat them dry.
  2. Drain the mozzarella balls and blot any excess moisture.
  3. Take a bamboo skewer and slide on one cherry tomato, followed by a folded basil leaf, and then one mozzarella ball. Repeat if using longer skewers.
  4. Place the assembled skewers on a serving platter.
  5. Whisk together olive oil, salt, and pepper in a small bowl and lightly brush over the skewers.
  6. Drizzle balsamic glaze over the skewers just before serving.

Notes

Use room temperature ingredients for the best texture. Assemble skewers up to 4 hours in advance but wait to add oil and glaze until serving.
