Ingredients
  

  • 2 large English cucumbers, thinly sliced
  • 8 oz imitation crab meat (or real crab), chopped
  • 2 medium ripe avocados, diced
  • 2 tablespoons toasted sesame seeds
  • 2 sheets nori, cut into thin strips
  • 3 stalks green onions, thinly sliced
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Method
 

  1. Wash and thinly slice the cucumbers, then place them in a large mixing bowl.
  2. Chop the imitation crab meat into bite-sized pieces and add to the bowl with the cucumbers. Dice the avocados and gently fold them in.
  3. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, and minced garlic until emulsified.
  4. Pour the dressing over the cucumber mixture and toss gently to coat.
  5. Add most of the toasted sesame seeds and sliced green onions, reserving some for garnish. Toss again lightly and garnish with remaining sesame seeds, green onions, and nori strips. Serve immediately.

Notes

For best texture, serve immediately after preparing. Store components separately if making ahead.
