- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
- Prepare bread by cutting into cubes and toasting in the oven at 375°F for 8-10 minutes or pan-frying in olive oil until crispy.
- In a large bowl, combine diced tomatoes, minced garlic, and chopped basil. Drizzle with olive oil and balsamic vinegar, add salt and pepper, and toss. Let sit for a few minutes.
- Add sliced chicken to the tomato mixture and toss gently to combine.
- Just before serving, add toasted bread cubes and fold in mozzarella if using. Serve immediately.
