Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • 4 cups Roma tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 4 cloves garlic, minced
  • 4 cups crusty Italian or French bread, cubed
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh mozzarella, cubed (optional)

Method
 

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
  2. Prepare bread by cutting into cubes and toasting in the oven at 375°F for 8-10 minutes or pan-frying in olive oil until crispy.
  3. In a large bowl, combine diced tomatoes, minced garlic, and chopped basil. Drizzle with olive oil and balsamic vinegar, add salt and pepper, and toss. Let sit for a few minutes.
  4. Add sliced chicken to the tomato mixture and toss gently to combine.
  5. Just before serving, add toasted bread cubes and fold in mozzarella if using. Serve immediately.

Notes

Store components separately for meal prep. Combine just before serving to maintain texture.
