  • 6 cups Fresh Broccoli Florets, cut into small, bite-sized pieces
  • 8-10 slices Crispy Bacon, cooked and crumbled
  • 1/2 cup Red Onion, finely diced
  • 1/2 cup Dried Cranberries or raisins
  • 1/2 cup Sunflower Seeds, roasted and salted
  • 1 cup Sharp Cheddar Cheese, shredded or small cubes
  • 1 cup Mayonnaise, high-quality
  • 2 tablespoons Apple Cider Vinegar
  • 3 tablespoons Granulated Sugar
  • 1/2 teaspoon Black Pepper, freshly cracked

Method
 

  1. Wash the broccoli heads thoroughly and pat them dry. Cut the florets into small, uniform pieces.
  2. Cook the bacon until crispy, preferably by baking it in the oven at 400°F for 15-20 minutes. Once cooled, crumble it into small bits.
  3. In a large mixing bowl, combine the broccoli florets, crumbled bacon, diced red onion, dried cranberries, sunflower seeds, and cheddar cheese. Toss gently to distribute evenly.
  4. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and black pepper until smooth.
  5. Pour the dressing over the vegetable mixture and fold everything together until well coated.
  6. Cover and refrigerate for at least one hour before serving to allow flavors to meld.

Notes

For best results, use raw broccoli and finely dice the red onion. Add sunflower seeds just before serving to maintain their crunch. Adjust dressing ingredients to taste.
