Method
- Wash the blueberries thoroughly under cold water and pat them dry.
- Add the blueberries, fresh lemon juice, lemon zest, sweetener, Dijon mustard, salt, and black pepper to a blender.
- Blend on low, gradually increasing to medium speed until the blueberries are fully pureed.
- With the motor running, slowly drizzle in the extra virgin olive oil until the dressing is thick and uniform.
- Taste and adjust seasoning if necessary, then pour into a glass jar.
Notes
Use organic ingredients for the best flavor. Store in an airtight container in the refrigerator for 5 to 7 days. Shake well before using.
