Ingredients
  

  • 1 cup fresh blueberries
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup extra virgin olive oil
  • 1-2 tablespoons honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Wash the blueberries thoroughly under cold water and pat them dry.
  2. Add the blueberries, fresh lemon juice, lemon zest, sweetener, Dijon mustard, salt, and black pepper to a blender.
  3. Blend on low, gradually increasing to medium speed until the blueberries are fully pureed.
  4. With the motor running, slowly drizzle in the extra virgin olive oil until the dressing is thick and uniform.
  5. Taste and adjust seasoning if necessary, then pour into a glass jar.

Notes

Use organic ingredients for the best flavor. Store in an airtight container in the refrigerator for 5 to 7 days. Shake well before using.
