Ingredients
  

  • 2 cups Fresh Blueberries
  • 4 ounces Goat Cheese (Chevre)
  • 6 cups Spring Mix or Baby Spinach
  • 1/2 cup Walnuts or Pecans (toasted)
  • 1/4 small Red Onion (thinly sliced)
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • 1 teaspoon Honey or Maple Syrup
  • Salt and Black Pepper (to taste)

Method
 

  1. Toast the nuts in a dry skillet over medium heat for 3-5 minutes until fragrant.
  2. In a small jar, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  3. Wash and dry the greens thoroughly.
  4. Thinly slice the red onion and soak in cold water if desired.
  5. In a large bowl, toss the greens with half of the dressing.
  6. Add blueberries, red onions, and toasted nuts on top.
  7. Crumble the goat cheese over the salad.
  8. Drizzle with remaining dressing and serve immediately.

Notes

For best results, do not dress the salad until ready to serve to prevent wilting. Store undressed components separately for freshness.
