- Toast the nuts in a dry skillet over medium heat for 3-5 minutes until fragrant.
- In a small jar, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
- Wash and dry the greens thoroughly.
- Thinly slice the red onion and soak in cold water if desired.
- In a large bowl, toss the greens with half of the dressing.
- Add blueberries, red onions, and toasted nuts on top.
- Crumble the goat cheese over the salad.
- Drizzle with remaining dressing and serve immediately.
Notes
For best results, do not dress the salad until ready to serve to prevent wilting. Store undressed components separately for freshness.
