  • 1 Can (15 oz) Canned Chickpeas (rinsed and dried)
  • 1 Large English Cucumber (diced)
  • 1 Medium Red Bell Pepper (chopped)
  • 1 Cup Cherry Tomatoes (halved)
  • 1/4 Cup Red Onion (finely minced)
  • 1/2 Cup Feta Cheese (crumbled)
  • 1/2 Cup Fresh Parsley and Mint (total)
  • 1/3 Cup Extra Virgin Olive Oil
  • 2 Tablespoons Fresh Lemon Juice
  • Dried Oregano, Salt, and Pepper (to taste)

Method
 

  1. Cook grains according to package instructions and let cool.
  2. Prepare the vinaigrette by whisking olive oil, lemon juice, oregano, salt, and pepper.
  3. Chop vegetables into uniform pieces.
  4. Assemble the salad by layering grains, chickpeas, vegetables, and feta in containers.
  5. Top with fresh herbs and dressing just before serving.
