Ingredients
  

  • 1.5 lbs Boneless Skinless Chicken Breasts
  • 6 cups Chopped Romaine Lettuce
  • 1 cup Canned Black Beans (rinsed)
  • 1 cup Sweet Corn (fresh or frozen)
  • 1 cup Cherry Tomatoes (halved)
  • 1/2 cup Red Onion (thinly diced)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 Large Avocado (sliced)
  • 1/2 cup Shredded Monterey Jack or Cheddar Cheese
  • 1/2 cup Your Favorite BBQ Sauce
  • 1/4 cup Creamy Ranch Dressing
  • 1/2 cup Tortilla Strips

Method
 

  1. Prepare the chicken by seasoning with salt and pepper, then grill until cooked through, brushing with BBQ sauce in the last two minutes.
  2. Let the chicken rest for five minutes before slicing.
  3. In a large bowl, combine romaine, black beans, corn, cherry tomatoes, and red onion. Toss gently.
  4. Add sliced avocado and shredded cheese to the salad base.
  5. Divide the salad mixture into bowls, top with BBQ chicken, drizzle with BBQ sauce and ranch dressing, and garnish with cilantro and tortilla strips.

Notes

Store chicken and salad base separately to maintain freshness. Use rotisserie chicken for a quicker option.
